Botanical name: Atriplex nummularia

The saltbush leaves are picked fresh, dehydrated to capture the salty herb flavour and ground ready for you to use. It is a great addition to quiches, soups, dips and breads. It is delicious with other light flavours such as chicken, fish and soft cheese, and also lovely in rice and potato dishes.

Uses

Traditionally used for damper or a nap. Leaves can be used to wrap around meat, fish or tofu. Also ideal for grills, pasta, batter, salad, dukkah and beer.

Health benefits

Saltbush contains a range of minerals, including calcium and magnesium, antioxidants, Vitamin E and is high in protein (28% protein).
